  • 0.3 teaspoon pepper black
  • teaspoons canola oil divided
  • ounces cremini mushrooms sliced
  • 0.8 cup milk fat-free
  • tablespoon flour all-purpose
  • teaspoons garlic fresh minced
  • Dash nutmeg 
  • 0.4 teaspoon salt 
  • 0.3 cup shallots finely chopped

Directions

  1. Heat a large skillet over medium-high heat.
  2. Add 1 1/2 teaspoons oil; swirl to coat.
  3. Add mushrooms; cook 6 minutes or until liquid evaporates.
  4. Remove mushrooms from pan.
  5. Add 1 1/2 teaspoons oil to pan; swirl to coat.
  6. Add spinach; cook 1 minute or until spinach wilts.
  7. Remove from heat.
  8. Heat a Dutch oven over medium heat.
  9. Add remaining 1 teaspoon oil; swirl to coat.
  10. Add shallots and garlic; cook 1 minute, stirring constantly.
  11. Combine milk and flour, stirring with a whisk.
  12. Add milk mixture, salt, pepper, and nutmeg to pan; bring to a boil, stirring constantly. Cook 3 minutes or until thickened, stirring constantly.
  13. Add cheese; stir until cheese melts and the mixture is smooth.
  14. Add mushrooms and spinach to milk mixture, and toss gently to coat.
