  • 0.8 cup chicken broth 
  • tablespoons flour all-purpose
  • 0.7 cup dannon oikos greek nonfat yogurt plain
  • servings salt to taste
  • 12 ounce leaf spinach chopped
  • tablespoon butter sweet

Directions

  1. In a 3-quart saucepan heat butter;
  2. Add flour and cook 2-3 minutes to create a roux. Slowly whisk in chicken broth and blend until smooth (mixture will be thick). Bring to a boil.
  3. Reduce heat to simmer, add spinach and heat through.
  4. Add yogurt, salt, pepper and nutmeg and heat through.
  5. Serve.
