Ingredients

  • tablespoon vegetable oil 
  • pound chicken breast halves boneless skinless cut into 1-inch pieces
  • cloves garlic finely chopped
  • teaspoons basil dried
  • teaspoons oregano dried
  • 29 ounces tomatoes diced organic drained well canned
  • cups whipping cream (heavy)
  • 0.5 teaspoon salt 
  • 0.5 teaspoon pepper freshly ground
  • 0.3 teaspoon ground pepper red (cayenne)
  • ounces rigatoni 
  • 16 ounces bell pepper red frozen thawed drained well
  • serving parmesan shredded

Directions

  1. Heat oil in Dutch oven over medium-high heat. Cook chicken, garlic, basil and oregano in oil about 5 minutes, stirring frequently, until chicken is no longer pink in center.
  2. Stir in tomatoes, whipping cream, salt, pepper and red pepper.
  3. Heat to boiling; reduce heat to low. Simmer uncovered about 10 minutes or until slightly thickened.
  4. Cook and drain rigatoni as directed on package. Stir rigatoni and vegetables into chicken mixture; cook until hot.
  5. Serve with cheese.
