  • cup carrots frozen sliced
  • cups rice long-grain hot cooked
  • tablespoon curry powder 
  • cups milk fat-free
  • 0.3 cup flour all-purpose
  • 0.5 cup cilantro leaves fresh chopped
  • 0.5 teaspoon ground pepper red
  • tablespoon juice of lime fresh
  • teaspoon lime rind grated
  • cup onion chopped
  • cup peas green frozen
  • 0.8 teaspoon salt 
  • pound chicken breasts boneless skinless cut into 1-inch pieces
  • tablespoon vegetable oil

Directions

  1. Lightly spoon flour into a dry measuring cup; level with a knife.
  2. Combine flour and next 3 ingredients.
  3. Heat oil in a large nonstick skillet over medium-high heat.
  4. Add chicken and onion; saut 5 minutes or until chicken is beginning to brown.
  5. Sprinkle flour mixture over chicken, stirring until chicken is thoroughly coated. Gradually add milk, stirring until smooth; add carrot. Bring to a boil; cover, reduce heat, and simmer 25 minutes, stirring occasionally.
  6. Stir in peas. Bring to a boil; cover, reduce heat, and simmer 5 minutes.
  7. Remove from heat; stir in cilantro, lime juice, and lime rind.
  8. Serve immediately over rice.
