Ingredients

  • tablespoons gold medal all purpose flour 
  • 0.5 pound asparagus steamed cut into 1 inch pieces
  • 0.3 teaspoon pepper black freshly ground
  • 8.8 ounces farro 
  • 0.3 teaspoon kosher salt 
  • cups milk unsweetened
  • cup romano cheese freshly grated
  • 1.5 cups meat from a rotisserie chicken shredded cooked
  • tablespoons butter unsalted

Directions

  1. Cook farro according to package directions.
  2. Drain and set aside for a few minutes.Melt butter in a small saucepan over medium heat.
  3. Whisk in flour, salt and pepper whisking until thickened and bubbly, about 1 minute. Slowly whisk in milk, stirring until thickened. This takes a few minutes. When thickened, add cheese, stirring until melted.
  4. Place cooked farro into a large saucepan over medium-low heat.
  5. Pour cheese sauce over farro and add steamed asparagus and cooked shredded chicken. Stir and season with additional salt and pepper to taste.
