  • 0.8 pound rotini pasta 
  • tablespoons butter unsalted
  • small shallots thinly sliced
  •  garlic clove minced
  • pound mushroom caps stemmed thinly sliced
  • tablespoons thyme sprigs fresh chopped
  • 0.5 cup sauvignon blanc white wine dry white such as sauvignon blanc
  • 0.8 cup cup heavy whipping cream 
  • serving parmesan grated for serving

Directions

  1. In a large pot of boiling salted water, cook pasta according to package instructions.
  2. Drain.
  3. Meanwhile, in a large skillet, melt butter over medium-high.
  4. Add shallots and garlic and cook, stirring, until shallots are translucent, about 5 minutes.
  5. Add mushrooms and thyme and cook until mushrooms are tender, about 2 minutes.
  6. Add wine and cook until liquid is reduced by half, about 2 minutes. Reduce heat to low, stir in cream, and cook until warmed (do not let boil). Season with salt and pepper.
  7. Add pasta to skillet, toss to combine, and top with Parmesan.
