Ingredients

  • 24 slices crusty baguette french (1/)
  • tablespoons brown sugar packed
  • oz cream cheese softened (goat)
  • teaspoons garlic finely chopped
  • teaspoon kosher salt (coarse)
  • teaspoon oregano fresh chopped
  • 0.3 cup red wine vinegar 
  • cups onion sweet thinly sliced
  • 0.5 cup vegetable stock 
  • tablespoons vegetable oil

Directions

  1. In 2-quart saucepan, heat oil over medium-high heat. Stir in onions and garlic; cook uncovered 10 minutes, stirring every 3 to 4 minutes.
  2. Add salt, brown sugar, vinegar and broth.
  3. Heat to boiling; reduce heat. Cover and simmer 30 minutes.
  4. Remove cover, increase heat to medium-high. Cook 2 to 5 minutes, stirring frequently, until most of the liquid is reduced and the mixture is the consistency of jam.
  5. Remove from heat; set aside.
  6. Heat oven to 325°F.
  7. Place bread slices on ungreased cookie sheet; spray lightly with cooking spray.
  8. Bake 6 to 9 minutes or until crispy.
  9. Place 1 teaspoon caramelized onions on each bread slice; top with 1 rounded teaspoon cream cheese.
  10. Sprinkle with herbs.
