  • large eggs 
  • 3.5 cups flour all-purpose
  • cup granulated sugar 
  • cup regular oats uncooked
  • cup pecans toasted chopped
  • serving powdered sugar 
  • 0.5 teaspoon salt 
  • 0.5 cup coconut or sweetened flaked
  • teaspoon vanilla extract 
  • 0.5 cup vegetable oil

Directions

  1. Combine flour, baking soda, and salt in a small bowl.
  2. Beat butter, granulated sugar, and brown sugar at medium speed with a heavy-duty electric mixer 2 minutes or until well blended.
  3. Add egg and vanilla, beating until blended.
  4. Add oil, beating until blended.
  5. Add flour mixture, beating at low speed until blended.
  6. Add oats and next 3 ingredients, beating until blended.
  7. Shape dough into 1-inch balls.
  8. Place on baking sheets, and flatten gently with tines of a fork.
  9. Bake at 325 for 12 minutes or until edges are lightly browned.
  10. Remove to wire racks to cool completely.
  11. Sprinkle with powdered sugar.
