Ingredients

  • 0.8 teaspoon curry powder 
  • 0.3 cup half-and-half fat-free
  • 0.7 cup less-sodium chicken broth fat-free
  • teaspoons flour all-purpose
  • tablespoons parsley fresh chopped
  • tablespoons green onions thinly sliced
  • 1.5 teaspoons juice of lemon fresh
  • teaspoons olive oil divided
  • 0.3 teaspoon pepper 
  • 0.5 teaspoon salt 
  • 1.3 pounds sea scallops 

Equipment

  • paper towels

Directions

  1. Combine first 6 ingredients in a bowl; stir well, and set aside.
  2. Pat scallops dry with paper towels to remove excess moisture; lightly coat with flour. Coat a large nonstick skillet with cooking spray; add 1 teaspoon oil.
  3. Place pan over medium-high heat until hot.
  4. Add half of scallops; cook 2 minutes on each side.
  5. Remove scallops from pan; set aside, and keep warm. Repeat procedure with remaining oil and scallops.
  6. Return scallops to pan.
  7. Add broth mixture; bring to a boil. Cook 3 minutes or until sauce is slightly thickened.
  8. Sprinkle with parsley and green onions.
