  • cup buttermilk 
  • Tbsp calumet baking powder 
  •  eggs 
  • cup each: cornmeal and flour 
  • cup corn kernels fresh
  • 0.5 cup bell pepper red chopped
  • 0.5 cup sugar 
  • 0.8 cup taco cheese shredded mexican style kraft finely

Directions

  1. Preheat oven to 400F.
  2. Combine cornmeal, flour, baking powder and sugar in large bowl. Stir in corn, cheese and red pepper.
  3. Beat egg in small bowl.
  4. Add butter and buttermilk; stir into corn mixture just until combined.
  5. Pour into greased 8-inch square baking pan.
  6. Bake 25 to 30 min. or until light golden brown and toothpick inserted in center comes out clean.
