  • cup banana ripe mashed
  • 0.3 cup canola oil 
  • 0.3 cup flaxseed meal 
  • 0.8 cup flour all-purpose
  • 0.5 cup yogurt plain low-fat
  • 0.5 teaspoon salt 
  • 0.8 cup sugar 
  • 0.5 cup walnuts chopped
  • 0.8 cup flour whole-wheat

Directions

  1. Preheat oven to 32
  2. Weigh or lightly spoon flours into dry measuring cups; level with a knife.
  3. Combine flours and next 4 ingredients (through baking soda) in a large bowl, stirring with a whisk.
  4. Combine banana and next 4 ingredients (through oil) in a small bowl.
  5. Add banana mixture to flour mixture, stirring just until moist.
  6. Spoon the batter into a 9 x 5inch loaf pan coated with cooking spray.
  7. Bake at 325 for 1 hour and 15 minutes or until a wooden pick inserted into the center comes out clean. Cool for 10 minutes in pan on a wire rack, and remove from pan. Cool on wire rack.
