Ingredients

  • large eggs 
  • large egg whites 
  • 0.5 cup milk low fat
  • cups bread cubed stale
  • 0.3 cup onion minced
  • 0.3 cup bell pepper red minced (capsicum)
  • 0.3 cup bell pepper yellow minced
  • cup mushrooms sliced
  • cup mushrooms sliced
  • tablespoons basil chopped
  • tablespoons basil chopped
  • tablespoons oz. bacon into pieces 
  • teaspoon olive oil 
  • 0.5 cup cheese 

Equipment

  • frying pan
  • oven
  • baking pan
  • aluminum foil

Directions

  1. Heat non-stick skillet over medium heat.
  2. Add oil and saute onion and peppers for 5 minutes to soften.
  3. Add mushrooms and saute another 5 minutes.
  4. Spray baking dish with cooking spray and add bread cubes. Top with mushroom mixture, basil, and salt and pepper to your taste.
  5. Sprinkle with bacon bits and cheese.
  6. Whip eggs and milk together and pour over bread mixture.
  7. Refrigerate for one hour up to overnight.
  8. Heat oven to 35
  9. Bake 20 minutes covered with foil. Uncover and bake another 10 minutes until puffed and lightly browned.
