Ingredients

  • tablespoon baking soda 
  • 1.8 cups brandy 
  • cups brown sugar packed
  • 1.5 cups butter melted
  • 1.5 cups fruit mixed dried
  •  eggs 
  • cups flour all-purpose
  • tablespoons ground allspice 
  • tablespoons ground cinnamon 
  • tablespoons ground cloves 
  • tablespoons nutmeg 
  • tablespoons lemon zest grated
  • 1.5 cups raisins 
  • tablespoons vanilla extract 
  • 1.5 cups walnut pieces chopped

Directions

  1. Preheat oven to 225 degrees F (110 degrees C). Grease and flour a tube pan.
  2. In a large bowl, combine sugar, flour, soda, cinnamon, cloves, allspice and nutmeg.
  3. Add eggs, lemon rind, vanilla, and 1/2 cup brandy.
  4. Mix thoroughly. Stir in fruit, nuts, and melted butter.
  5. Pour into prepared pan.
  6. Bake for 1 hour in the preheated oven, or until a tester inserted in the center comes out clean. Cool on a wire rack.
  7. Wrap cooled cake in foil.
  8. Sprinkle 2 tablespoons brandy over the cake everyday for 2 weeks.
