Ingredients

  • oz crusty baguette (1/)
  • tablespoons olive oil 
  • large cloves garlic 
  • 14.5 oz canned tomatoes diced organic drained canned
  • 0.8 cup mozzarella fresh diced
  • tablespoons basil fresh chopped
  • 0.3 teaspoon coarse salt (kosher or sea)
  • 0.3 teaspoon pepper

Directions

  1. Heat oven to 425°F. On ungreased cookie sheet, place bread slices.
  2. Brush oil on slices of bread.
  3. Bake 4 to 5 minutes or until very light golden brown. Cool 5 minutes.
  4. Meanwhile, stir together all remaining ingredients except garlic.
  5. Cut garlic cloves in half. Rub cut sides of garlic over toasted bread slices. Spoon mixture onto bread slices.
  6. Serve immediately.
