  • 16 ounce cannellini beans beans white rinsed drained canned
  • 0.5 teaspoon pepper red crushed
  • tablespoons garlic fresh minced
  • cups grape tomatoes halved
  • 0.8 teaspoon kosher salt divided
  • tablespoons juice of lemon fresh
  • tablespoons olive oil extra-virgin
  • ounces parmesan cheese grated
  • ounces pasta like spaghetti uncooked

Directions

  1. Cook pasta according to package directions, omitting salt and fat.
  2. Drain pasta in a colander over a bowl, reserving 1/2 cup pasta water.
  3. Place pasta in a small bowl.
  4. Add 1/4 teaspoon salt, tossing gently. Set aside, and keep warm.
  5. Return pan to medium heat.
  6. Add oil, garlic, and pepper; cook 2 minutes or until garlic is lightly browned, stirring occasionally. Stir in remaining 1/2 teaspoon salt, tomatoes, and beans; cook 2 minutes.
  7. Add pasta; cook 4 minutes, stirring frequently.
  8. Add reserved pasta water and arugula, tossing gently to combine.
  9. Remove from heat. Stir in lemon juice and cheese.
