  • 2.3 teaspoons baking soda 
  • 0.5 cup buttermilk 
  • large eggs 
  • 2.3 cups flour all-purpose plus more
  • tablespoon ginger grated peeled
  • 0.5 cup corn syrup dark
  • 0.5 teaspoon ground allspice 
  • teaspoon ground cinnamon 
  • 0.8 teaspoon ground cloves 
  • 0.5 teaspoon nutmeg 
  • teaspoon kosher salt 
  • tablespoon powdered sugar 
  • 0.3 cup cream sour
  • 0.5 cup sugar 
  • 0.5 cup butter unsalted plus more for pan room temperature (1 stick)

Directions

  1. Preheat oven to 350°F. Butter and flour pan; set on a rimmed baking sheet.
  2. Whisk 2 1/4 cups flour and next 6 ingredients in a medium bowl. Using an electric mixer, beat 1/2 cup butter and sugar until fluffy, about 3 minutes.
  3. Add sour cream; beat to blend.
  4. Add cane syrup and 1/2 cup hot water; beat until smooth. Beat in eggs one at a time; blend well between additions.
  5. Add ginger. Beat in dry ingredients in 3 additions on low speed.
  6. Add buttermilk; beat just to blend.
  7. Pour into pan; smooth top.
  8. Bake until a tester inserted into center of cake comes out clean, about 30 minutes.
  9. Let cool completely. Dust with powdered sugar before serving.
