Ingredients

  • 1.3 cups brown sugar packed
  • cup butter softened
  •  eggs 
  • cups flour all-purpose
  • teaspoon ground cinnamon 
  • tablespoon ground ginger 
  • 0.5 teaspoon lemon zest 
  • 0.5 teaspoon salt

Directions

  1. Preheat an oven to 350 degrees F (175 degrees C). Lightly grease two baking sheets.
  2. Combine flour, ginger, cinnamon and salt and set aside.
  3. In large bowl, cream butter and brown sugar. Beat in eggs. Beat in lemon zest. Gradually blend in dry ingredients.
  4. Roll out dough on floured surface to about 1/4 inch thickness.
  5. Cut out cookies using a 2 inch round cookie cutter.
  6. Place 1 inch apart on prepared cookie sheets.
  7. Bake 12-15 minutes or until lightly colored. Cool on wire racks.
