  • tablespoons crystallized ginger minced
  • large eggs lightly beaten
  • tablespoons flour all-purpose
  • teaspoons ginger fresh grated peeled
  • 1.3 cups honey graham cracker crumbs low-fat (9 sheets)
  • 0.8 cup granulated sugar 
  • tablespoons granulated sugar 
  • 0.3 cup butter light melted
  • 0.3 cup juice of lime fresh
  • teaspoons lime rind grated
  • teaspoons powdered sugar 
  • 0.1 teaspoon salt

Directions

  1. Preheat oven to 35
  2. Combine first 4 ingredients in a mixing bowl; mix well. Press into an 8-inch square baking pan coated with cooking spray.
  3. Bake at 350 for 12 minutes; cool slightly on a wire rack.
  4. Whisk together eggs and next 7 ingredients until smooth.
  5. Pour egg mixture over prepared crust.
  6. Bake at 350 for 20 to 22 minutes or until set. Cool completely on wire rack. Sift powdered sugar evenly over top.
  7. Cut into bars.
