Ingredients

  • package yeast dry
  • 0.7 cup water (105° to 115°F)
  • tablespoon olive oil extra virgin extra-virgin
  •  egg whites 
  • 16 oz flour gluten free
  • tablespoon sugar 
  • teaspoon xanthan gum 
  • 0.5 teaspoon salt 
  • 0.5 cup canned tomatoes canned crushed undrained (from 14- to 15-oz can)
  • teaspoon olive oil extra virgin extra-virgin
  • teaspoon garlic finely chopped
  • 0.3 teaspoon salt 
  • 0.1 teaspoon pepper 
  • 0.3 cup basil fresh cut into thin strips
  • 0.3 cup parmesan gluten-free shredded finely
  • oz mozzarella fresh cut into 1/4-inch slices

Directions

  1. In large bowl, stir together yeast and water; let stand 5 minutes. Stir in 1 tablespoon oil and the egg white. Stir in 1 1/4 cups flour blend, the sugar, xanthan gum and 1/2 teaspoon salt. Cover with plastic wrap.
  2. Let stand in warm place 1 hour.
  3. Generously grease 12-inch pizza pan or large cookie sheet.
  4. Place dough on pan. Press into 11-inch circle. Cover; let rise 30 minutes.
  5. Heat oven to 425°F.
  6. With wet fingers, press dough into 12-inch circle.
  7. Bake 10 to 12 minutes or until edges begin to brown. Increase oven temperature to 450°F.
  8. In small bowl, stir together tomatoes, 1 teaspoon oil, the garlic, 1/4 teaspoon salt and the pepper.
  9. Spread evenly over prebaked crust to within 1/2 inch of edge.
  10. Sprinkle with basil and Parmesan cheese. Divide mozzarella evenly over crust.
  11. Bake about 8 minutes longer or until cheese is bubbly and edge is golden brown.
  12. Let stand 1 to 2 minutes before slicing.
