Ingredients

  • 0.3 teaspoon pepper black
  • cups muffin breadcrumbs fresh english ( 2 muffins)
  • 0.3 teaspoon ground pepper red
  • teaspoon penzey's southwest seasoning dried italian
  • tablespoon juice of lemon fresh
  • 0.5 cup buttermilk low-fat
  • 0.3 cup parmesan cheese grated
  • 0.5 teaspoon salt 
  • pound skinned cut into 1/2-inch strips

Equipment

  • ziploc bags
  • wax paper

Directions

  1. Combine first 6 ingredients in a zip-top plastic bag.
  2. Add chicken to bag; seal. Marinate in refrigerator 30 minutes, turning occasionally.
  3. Preheat oven to 37
  4. Combine breadcrumbs and cheese in a bowl.
  5. Remove chicken from bag and arrange on a sheet of wax paper.
  6. Sprinkle chicken evenly with 1 cup breadcrumb mixture. Turn chicken, and sprinkle with remaining breadcrumb mixture. Arrange chicken strips on a baking sheet coated with cooking spray.
  7. Bake at 375 for 30 minutes or until golden brown.
