  • tablespoons capers 
  • 1.5 cups less-sodium chicken broth fat-free
  • ounce feta cheese crumbled
  • tablespoons flour all-purpose
  •  garlic cloves minced
  • 0.3 cup golden raisins 
  • slices optional: lemon thin
  • tablespoons juice of lemon 
  • tablespoon olive oil 
  • cup onion thinly sliced
  • teaspoon oregano dried
  • 16 ounce skinned

Directions

  1. Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; flatten to 1/4-inch thickness using a meat mallet or rolling pin.
  2. Combine flour and oregano in a shallow dish; dredge chicken in flour mixture.
  3. Heat oil in a large nonstick skillet over medium-high heat.
  4. Add chicken; cook 5 minutes on each side.
  5. Remove chicken from pan; keep warm.
  6. Add onion and garlic to pan; saut 2 minutes. Stir in broth, raisins, and lemon juice; cook 3 minutes, scraping pan to loosen browned bits. Return chicken to pan. Cover, reduce heat, and simmer 10 minutes or until chicken is done.
  7. Remove chicken from pan; keep warm.
