Ingredients

  • 1.3 cups cherry tomatoes seeded chopped
  • cup cucumber diced peeled seeded
  • 4.5 ounces feta cheese crumbled
  • cup bell pepper green chopped
  • tablespoons olive oil extra-virgin
  • 0.5 cup parsley fresh italian chopped
  • 8-inch diameter pita breads whole wheat halved
  • 0.5 cup radishes chopped
  • 0.7 cup onion red chopped
  • tablespoon red wine vinegar

Directions

  1. Whisk olive oil and red wine vinegar in large bowl. Season dressing with salt and pepper.
  2. Mix tomatoes, cucumber, bell pepper, red onion, radishes, and parsley into dressing. Stir in feta cheese. DO AHEAD: Salad can be made 2 days ahead. Cover and chill.
  3. Using slotted spoon, transfer salad mixture to pita bread halves.
  4. Serve sandwiches immediately.
