  • cups pasta like spaghetti hot cooked uncooked thin ( 8 ounces pasta)
  • ounces feta cheese divided crumbled
  • 0.3 cup parsley fresh divided chopped
  • large garlic clove minced
  • 0.5 cup green onions sliced
  • tablespoons juice of lemon 
  • teaspoons olive oil 
  • teaspoon oregano dried
  • servings pepper freshly ground
  • cups tomatoes diced

Directions

  1. Heat oil in a large nonstick skillet over medium-high heat.
  2. Add oregano and garlic; saut 30 seconds.
  3. Add tomatoes, green onions, 2 tablespoons parsley, and lemon juice; cook 2 minutes or until thoroughly heated.
  4. Combine tomato mixture, spaghetti, and 3/4 cup cheese; toss gently. Top with remaining cheese and parsley, and serve with pepper.
  5. Garnish with lemon slices and green onions, if desired.
