  • 6-inch flour tortillas ()
  • Tbsp juice of lemon 
  • cups mushroom 
  • 0.3 cup athenos reduced fat feta cheese crumbled
  • cups romaine lettuce chopped
  • 0.3 cup greek vinaigrette dressing kraft
  • cup zucchini strips red halved

Equipment

  • aluminum foil

Directions

  1. Mix dressing and lemon juice. Toss mushrooms, zucchini, red peppers and onions in large bowl.
  2. Add dressing mixture; mix lightly.
  3. Place in foil-lined 15x10x1-inch baking pan.
  4. Bake at 400F for 15 minutes, stirring after 10 minutes.
  5. Cover tortillas with lettuce; top with vegetable mixture.
  6. Sprinkle with cheese.
  7. Roll up.
