  • servings pepper black freshly ground
  • 1.5 pounds green beans fresh trimmed
  • 1.5 tablespoons juice of lemon 
  •  lemon zest 
  • tablespoon olive oil 
  • 0.8 cup panko bread crumbs 
  • tablespoon sea salt divided
  • 0.3 cup slivered almonds toasted
  • tablespoon butter unsalted

Directions

  1. Melt butter in a skillet over medium heat.
  2. Add panko; stir constantly for 2 minutes or until golden.
  3. Remove from heat. Stir in zest and 1/4 teaspoon salt.
  4. Fill a large saucepan 2/3 full of water; bring to a boil.
  5. Add remaining 1 tablespoon salt.
  6. Add beans; cook 2 minutes. Fill a large bowl 2/3 full of ice water.
  7. Transfer beans to ice water to cool; drain.
  8. Add oil to a skillet over medium heat.
  9. Add beans; saut, stirring constantly, 3 minutes or until heated.
  10. Add lemon juice and almonds; saut 1 minute. Season with pepper.
  11. Add panko topping; serve.
