Ingredients

  • teaspoons double-acting baking powder 
  • 4.5 ounce chiles green drained chopped canned
  • ounce whole-kernel corn can) canned drained

  • 0.8 cup flour all-purpose
  • 0.5 teaspoon salt 
  • 0.7 cup skim milk 
  • 0.3 cup sugar 
  • tablespoons vegetable oil 
  • 0.8 cup cornmeal yellow

Directions

  2. Combine first 5 ingredients in a bowl; make a well in center of mixture.
  3. Combine milk, oil, and egg; stir well.
  4. Add to dry ingredients, stirring just until moist. Fold in corn and green chiles.
  5. Coat cast-iron cornstick pans heavily with cooking spray; place in a 400 oven for 10 minutes. Spoon batter evenly into pans.
  6. Bake at 400 for 20 minutes or until lightly browned.
  7. Remove cornsticks from pans immediately; serve warm.
