Ingredients

  • 0.5 teaspoon anchovy paste 
  • 0.5 teaspoon pepper black divided
  • teaspoon bottled garlic minced
  • teaspoon dijon mustard 
  • ounces bread french cut into 1/2-inch cubes ( 2 cups)
  • cups lettuce chopped
  • tablespoons olive oil 
  • ounce parmesan fresh grated
  • cups the of 1 cos lettuce chopped
  • 16 ounce chicken breast halves boneless skinless halved lengthwise
  • tablespoons citrus champagne vinegar

Directions

  1. Preheat oven to 40
  2. Spread bread cubes in a single layer on a baking sheet.
  3. Bake at 400 for 9 minutes or until lightly toasted.
  4. Heat a grill pan over high heat. Coat the pan with cooking spray.
  5. Sprinkle chicken with 1/4 teaspoon pepper.
  6. Add chicken to pan, and cook 3 1/2 minutes on each side or until done.
  7. Remove from pan; let stand 5 minutes.
  8. Cut chicken into slices.
  9. Combine remaining 1/4 teaspoon pepper, vinegar, and next 4 ingredients (through anchovy paste) in a large bowl, stirring with a whisk.
  10. Add romaine and radicchio to bowl; toss well to coat. Divide lettuce and chicken evenly among each of 4 plates. Top each serving with 1/2 cup croutons and 1 tablespoon cheese.
