Ingredients

  • 1.5 pounds skinned and boned chicken breasts 
  • 12 6-inch flour tortillas ()
  • tablespoon marjoram fresh minced
  • 0.3 cup juice of lime 
  • tablespoons olive oil 
  • servings cilantro-pecan pesto 
  • teaspoon pepper 
  • servings toppings: salsa picante sour chopped
  • teaspoon salt 
  • ounces mexican four-cheese blend shredded

Directions

  1. Combine first 5 ingredients in a shallow dish or zip-top freezer bag; add chicken. Cover or seal, and chill 2 hours.
  2. Remove chicken from marinade, discarding marinade.
  3. Grill chicken, covered with grill lid, over medium-high heat (350 to 40
  4. minutes on each side or until done.
  5. Cut chicken into thin strips.
  6. Top 1 side of 6 tortillas evenly with Cilantro-Pecan Pesto, cheese, and chicken. Top with remaining tortillas.
  7. Cook quesadillas in a lightly greased skillet or griddle over medium-high heat (35
  8. to 3 minutes on each side or until browned.
  9. Cut each quesadilla into quarters.
  10. Serve with desired toppings.
