Ingredients

  • ounce pineapple with juice crushed canned
  •  eggs separated
  • pound hawaiian bread sweet sliced
  • tablespoons honey 
  • ounce mandarin orange segents drained canned
  • cup maple syrup 
  • teaspoon orange zest grated
  • 0.5 teaspoon rum extract flavored
  • 0.5 teaspoon vanilla extract 
  • tablespoon water

Directions

  1. In a shallow bowl, whisk together egg yolks, egg white, vanilla, rum extract, orange zest, water and 1 tablespoon honey.
  2. Coat bread slices in egg mixture; set aside.
  3. In a small saucepan, combine crushed pineapple, mandarin oranges, honey and maple syrup. Simmer over medium-low heat for 3 minutes.
  4. Heat a lightly oiled griddle or frying pan over medium high heat. Fry bread slices until brown on both sides.
  5. Serve hot with warm fruit sauce.
