Ingredients

  • 1.3 teaspoons baking soda 
  • 0.5 cup brown sugar packed
  • cup buttermilk 
  • tablespoons canola oil 
  • large eggs lightly beaten
  • 0.3 cup flaxseed meal 
  • 4.5 ounces flour all-purpose
  • 0.3 cup golden raisins 
  • 0.1 teaspoon ground allspice 
  • 0.1 teaspoon ground nutmeg 
  • tablespoons honey 
  • tablespoons pistachios finely chopped
  • 0.1 teaspoon salt 
  • 4.8 ounces flour whole wheat

Directions

  1. Preheat oven to 35
  2. Lightly spoon flours into dry measuring cups level with a knife.
  3. Combine flours and next 5 ingredients (through allspice) in a medium bowl, and stir well with a whisk. Make a well in center of mixture.
  4. Combine buttermilk, sugar, canola oil, and eggs; add to flour mixture, stirring just until moist. Stir in 1/4 cup golden raisins. Spoon batter into 12 muffin cups coated with cooking spray.
  5. Sprinkle evenly with pistachios.
  6. Bake at 350 for 15 minutes or until muffins spring back when touched lightly in center.
  7. Remove muffins from pans immediately; cool on a wire rack.
  8. Drizzle honey evenly over tops of the muffins.
