  • 10 cups day-old country bread 
  • large eggs 
  • tablespoon rosemary fresh chopped
  •  garlic cloves chopped
  • 0.3 cup golden raisins 
  • cup olives green pitted coarsely chopped
  • teaspoons kosher salt 
  • cups chicken broth low-sodium divided
  • tablespoons olive oil divided
  • tablespoon oregano fresh chopped
  • 0.5 cup pinenuts toasted
  • 0.5 teaspoon pepper flakes red crushed
  • 0.3 cup red wine vinegar 
  • tablespoon sugar 
  • bunch swiss chard red cut into 1/2" pieces, leaves torn
  • 0.3 cup butter unsalted plus more for baking dish ()
  • 2.5 cups onions yellow chopped

Directions

  1. Preheat oven to 250°F. Butter a 13x9x2"baking dish; set aside. Soak raisins in1 cup broth in a small bowl for 30 minutes.
  2. Scatter bread in a single layer on arimmed baking sheet.
  3. Bake, stirringoccasionally, until dried out, about 1 hour.
  4. Let cool and transfer to a very large bowl.
  5. Heat 2 tablespoons oil in a large skillet overmedium-high heat; add Swiss chard leavesand stir constantly until just wilted.
  6. Transferto bowl with bread.
  7. Heat 2 tablespoons oil in sameskillet; add stems and cook, stirring often,until crisp-tender, 3-5 minutes.
  8. Add to bowl.
  9. Heat 4 tablespoons oil and 1/4 cup butter in sameskillet; add onions and garlic. Stir often untiljust beginning to brown, about 10 minutes.Stir in vinegar and sugar; cook until vinegaris almost evaporated, about 5 minutes.
  10. Add onion mixture to chard in bowl.
  11. Addraisins with broth, olives, and next 5ingredients; gently fold into bread mixtureuntil thoroughly combined.
  12. Drizzle in 1 cupbroth and toss gently.
  13. Let cool completely.
  14. Preheat oven to 350°F.
  15. Whisk remaining1 cup broth and eggs in a small bowl. Gentlyfold into dressing until thoroughly combined.
  16. Transfer to prepared dish, coverwith foil, and bake until an instant-read thermometerinserted into the center ofdressing registers 160°F, about 40 minutes.DO AHEAD: Dressing can be made 1 dayahead. Uncover; let cool. Cover; chill.
  17. Bake dressing, uncovered, until set andtop is browned and crisp, 40-45 minuteslonger (if chilled, add 10-15 minutes).
