Ingredients

  • teaspoon baking soda 
  • cup kernel corn whole frozen
  •  eggs lightly beaten
  •  egg whites lightly beaten
  • cup flour all-purpose
  • clove garlic minced
  • 0.5 cup green onions sliced
  • tablespoons jalapeno minced ( 3 small peppers)
  • cup nonfat buttermilk 
  • 0.8 teaspoon salt 
  • tablespoons sugar 
  • tablespoons vegetable oil 
  • cup cornmeal yellow

Directions

  1. Combine first 5 ingredients in a large bowl; make a well in center of mixture.
  2. Combine buttermilk and next 3 ingredients; stir in corn, green onions, jalapeo pepper, and garlic.
  3. Add to dry ingredients, stirring just until moistened.
  4. Spoon batter into a 9-inch square pan coated with cooking spray.
  5. Bake at 375 for 30 to 35 minutes or until done. Cool 5 minutes in pan on a wire rack.
