The star of this recipe is the unique combination of raspberry or apricot preserves, nestled in the center of each cookie, creating a beautiful "jeweled" effect. The base of these thumbprint cookies is a buttery, sweet dough, perfectly balanced with a hint of almond extract. The dough's texture is achieved through a simple blend of softened butter, confectioners' sugar, an egg yolk, almond extract, and all-purpose flour. After a brief chill in the refrigerator, the dough is shaped into balls, indented with a thumb, and baked to golden perfection.
