  • cup butter softened
  •  egg yolks beaten
  •  egg yolks slightly beaten
  • 3.5 cups flour all-purpose
  • tablespoons ground cinnamon 
  • teaspoons lemon rind grated
  • cup pecans finely chopped
  • cup sugar

Directions

  1. Cream butter; gradually add 1 cup sugar, beating until light and fluffy.
  2. Add 6 yolks and lemon rind; beat well. Gradually add flour to creamed mixture, and mix well.
  3. Turn dough out onto a lightly floured surface.
  4. Roll to 1/4-inch thickness, and cut with assorted 2-inch cookie cutters.
  5. Place cookies on lightly greased baking sheets.
  6. Brush tops of cookies with 3 egg yolks.
  7. Combine 1 cup sugar, pecans, and cinnamon; sprinkle over cookies.
  8. Bake at 350 for 15 minutes. Cool cookies on wire racks.
