Ingredients

  • 1.7 cups cherry tomatoes halved ( 1 pint)
  • 1.5 cups cucumber diced english
  • tablespoon olive oil extravirgin
  • ounce feta cheese crumbled
  • tablespoon optional: dill fresh chopped
  • tablespoons mint leaves fresh chopped
  • large garlic clove minced
  • 0.3 cup green onion chopped
  • 0.3 cup juice of lemon fresh
  • teaspoon salt 
  • cups water 
  • 10 ounce couscous whole wheat

Directions

  1. Combine first 4 ingredients in a medium saucepan; bring to a boil. Gradually stir in couscous.
  2. Remove from heat. Cover and let stand 5 minutes. Fluff with a fork; cool.
  3. Combine couscous, tomatoes, and next 5 ingredients (through dill) in a large bowl; toss well.
  4. Add cheese.
