Ingredients
- 1.7 cups cherry tomatoes halved ( 1 pint)
- 1.5 cups cucumber diced english
- 1 tablespoon olive oil extravirgin
- 4 ounce feta cheese crumbled
- 1 tablespoon optional: dill fresh chopped
- 2 tablespoons mint leaves fresh chopped
- 1 large garlic clove minced
- 0.3 cup green onion chopped
- 0.3 cup juice of lemon fresh
- 1 teaspoon salt
- 2 cups water
- 10 ounce couscous whole wheat

- Combine first 4 ingredients in a medium saucepan; bring to a boil. Gradually stir in couscous.
- Remove from heat. Cover and let stand 5 minutes. Fluff with a fork; cool.
- Combine couscous, tomatoes, and next 5 ingredients (through dill) in a large bowl; toss well.
