  •  cinnamon sticks 
  • 0.3 teaspoon pepper red crushed
  • 0.5 cup julienne-cut cucumber 
  • cup less-sodium chicken broth fat-free
  • 0.3 cup yogurt plain fat-free
  • tablespoon ginger fresh peeled chopped
  • 1.5 tablespoons juice of lemon fresh
  • cup lentils dried red
  • 0.5 teaspoon salt 
  • tablespoon vegetable oil 
  • cups vidalia sweet vertically sliced
  • cups water divided
  • 5.6 ounce flatbreads (such as Flatout)

Directions

  1. Heat oil in a medium saucepan over medium heat.
  2. Add onion; cook 5 minutes or until tender, stirring occasionally.
  3. Add lentils, ginger, pepper, and cinnamon; cook 10 minutes, stirring occasionally. Stir in 1 cup water and broth; bring to a boil. Reduce heat, and simmer 10 minutes.
  4. Add remaining 1 cup water and juice, and cook 30 minutes or until thick, stirring occasionally. Stir in salt.
  5. Remove cinnamon stick; cool lentil mixture completely.
  6. Spread about 1/2 cup mixture over each flatbread.
  7. Spread 1 tablespoon yogurt over each serving; divide cucumber evenly among flatbreads.
  8. Roll up. Cover and chill.
