Craving a comforting classic without the guilt? This Light Macaroni Casserole is the perfect solution! It's a vegetarian delight, ready in under an hour, and clocking in at just 111 calories per serving. This recipe transforms the familiar comfort food into a lighter, healthier option, ideal as a satisfying side dish, an interesting antipasti offering, a delightful starter, or even a guilt-free snack.

What makes this casserole special? We've cleverly swapped out high-fat ingredients for lighter alternatives without sacrificing flavor. Imagine tender elbow macaroni mingling with a vibrant mix of sautéed green peppers, celery, and onions, all held together by a creamy, tangy sauce. The secret lies in the combination of nonfat mayonnaise and sour cream alternative, creating a luscious texture that belies its light caloric footprint.

But it doesn't stop there! Diced pimiento adds a pop of color and a subtle sweetness, while the nonfat process cheese spread loaf melts beautifully, contributing a cheesy richness. A hint of red pepper provides a gentle warmth, balanced by the earthy flavors of mushrooms and the comforting familiarity of elbow macaroni. Finally, a crispy topping of whole wheat breadcrumbs and a sprinkle of paprika add the perfect finishing touch, creating a visually appealing and texturally satisfying dish.
