Ingredients

  •  egg whites lightly beaten
  •  eggs beaten
  • cups bread french cubed
  • cup mushrooms fresh sliced
  • teaspoon garlic minced
  • cup bell pepper diced green
  • ounces cheddar cheese shredded reduced-fat
  • teaspoon butter reduced-calorie
  • 0.3 cup parmesan cheese grated
  • 0.3 teaspoon pepper freshly ground
  • 0.1 teaspoon salt 
  • tablespoons shallots minced
  • 2.5 cups skim milk 
  • cup zucchini diced

Directions

  1. Coat a large nonstick skillet with cooking spray.
  2. Add margarine, and place over medium-high heat until margarine melts.
  3. Add shallots and garlic; saute until tender.
  4. Add mushrooms; saute 5 minutes or until tender.
  5. Add zucchini and green pepper; saute 5 minutes or until crisp-tender.
  6. Remove from heat, and set aside.
  7. Combine milk, eggs, egg whites, pepper, and salt in a large bowl. Stir in vegetable mixture, bread cubes, and cheeses.
  8. Pour mixture into a 13- x 9- x 2-inch baking dish coated with cooking spray.
  9. Bake, uncovered, at 325 for 50 to 60 minutes or until lightly browned.
  10. Let stand 5 minutes.
  11. Cut into rectangles, and serve immediately.
