Ingredients

  • 0.3 teaspoon pepper black freshly ground
  • tablespoons butter divided
  • cups pasta hot cooked uncooked ( 12 ounces pasta)
  • tablespoon olive oil extravirgin
  • 1.5 cups less-sodium chicken broth fat-free divided
  • 0.3 cup basil fresh chopped
  • cup basil leaves fresh
  •  garlic cloves minced
  • 0.5 cup leek chopped
  • 16 ounce pre mushrooms 
  • 20 ounce peas green frozen
  • 1.3 teaspoons salt

Directions

  1. Melt 1 tablespoon butter in a large nonstick skillet over medium heat.
  2. Add leek; cook 3 minutes, stirring frequently. Stir in 3/4 cup broth and peas; bring to a boil. Partially cover, reduce heat, and simmer 5 minutes.
  3. Place 1 1/2 cups pea mixture, remaining 3/4 cup broth, 1 cup basil leaves, and oil in a blender, and process until smooth.
  4. Place pureed pea mixture in a large bowl.
  5. Add remaining pea mixture to pureed pea mixture, and stir to combine.
  6. Melt 2 tablespoons butter in pan over medium-high heat.
  7. Add mushrooms and garlic; saut 6 minutes or until mushrooms are tender. Stir in pea mixture, pasta, salt, and black pepper.
  8. Sprinkle chopped basil evenly over each serving.
