Ingredients

  • slices bacon halved
  • 0.3 teaspoon pepper black freshly ground
  • tablespoons flour all-purpose
  • teaspoons spring onion thinly sliced
  • cups milk 1% low-fat divided
  • 0.3 cup cream sour reduced-fat
  • 1.3 cups beef broth fat-free
  • teaspoons olive oil 
  • 0.5 cup onion 
  • 24 ounce potatoes - remove skin red
  • 0.5 teaspoon salt 
  • 0.3 cup cheddar cheese shredded

Directions

  1. Pierce potatoes with a fork. Microwave on HIGH 13 minutes or until tender.
  2. Cut in half; cool slightly.
  3. While potatoes cook, heat oil in a saucepan over medium-high heat.
  4. Add onion; saut 3 minutes.
  5. Add broth.
  6. Combine flour and 1/2 cup milk; add to pan with 1 1/2 cups milk. Bring to a boil; stir often. Cook 1 minute.
  7. Remove from heat; stir in sour cream, salt, and pepper.
  8. Arrange bacon on a paper towel on a microwave-safe plate. Cover with a paper towel; microwave on HIGH for 4 minutes. Crumble bacon.
  9. Discard potato skins. Coarsely mash potatoes into soup. Top with cheese, green onions, and bacon.
