If you're looking to elevate your culinary repertoire, our Luxury Bread & Onion Sauce is a dish that promises to impress and satisfy. This delightful vegetarian recipe brings together simple ingredients to create a rich and creamy sauce that pairs beautifully with a variety of dishes.

The base of this comforting sauce is the humble onion, slowly cooked in butter until it reaches a soft, golden perfection. Infused with aromatic thyme and a bay leaf, the onions create a flavorful foundation that is further enhanced by the creamy richness of whole milk, a hint of sweetness from star anise, and a warm depth from ground cloves. The result is a sauce that is both indulgent and sophisticated.

By adding chopped white bread, the sauce becomes velvety and thick, making it a perfect accompaniment to roasted vegetables, grilled cheese, or even a simple baked potato. The addition of crème fraîche at the end elevates the sauce with a luscious creaminess that will keep you coming back for more.

This recipe not only comes together in just 45 minutes, making it perfect for a weeknight dinner, but it can also be prepared ahead of time and gently reheated, making it ideal for entertaining. With just 117 calories per serving, you can indulge without guilt. So gather your ingredients, and let’s create a dish that will have everyone at your table wanting seconds!

Ingredients

  • 25 butter
  • large onion very finely chopped
  • tsp thyme leaves
  •  bay leaves
  • 600 ml milk whole
  •  star anise
  • pinch ground cloves
  • 100 sandwich bread white chopped
  • tbsp crème fraîche

Equipment

  • bowl
  • frying pan
  • immersion blender

Directions

  1. Heat the butter in medium pan until just starting to sizzle. Cook the onion over a very low heat with the thyme and bay for 15-20 mins until soft and just lightly golden.
  2. Pour the milk into the pan, add the star anise and ground cloves, season and bring to the boil. Turn off the heat and leave to infuse for at least 10 mins. Can be done the night before.
  3. Remove the star anise and bay, and add the bread chunks to the pan. Bring back to the boil, then remove from the heat and blitz using a hand blender. Return to the heat, stir in the crme frache and simmer gently for 2 mins until thickened. Can be made ahead and reheated with a splash more milk. Tip into a bowl, sprinkle with cracked pepper, and add the bay leaf, if you like.
