  • 0.3 cup breadcrumbs dry
  • cups milk fat-free
  • tablespoons flour all-purpose
  • 0.1 teaspoon ground nutmeg 
  • tablespoons parmesan cheese fresh grated
  • 0.1 teaspoon pepper 
  • 0.5 cup roasted bell pepper diced red
  • 0.3 teaspoon salt 
  • ounces sharp cheddar cheese shredded reduced-fat

Directions

  1. Preheat oven to 37
  2. Coat a large saucepan with cooking spray; place over medium heat until hot.
  3. Add carrot; saut 5 minutes.
  4. Place flour in a small bowl. Gradually add milk, stirring well with a whisk; add to carrot. Cook over medium heat 8 minutes, stirring constantly. Reduce heat to low.
  5. Add Cheddar cheese and next 4 ingredients; stir until cheese melts.
  6. Add macaroni and red bell pepper; stir well.
  7. Spoon mixture into a 2-quart baking dish coated with cooking spray; sprinkle with breadcrumbs.
  8. Bake at 375 for 30 minutes.
