Ingredients

  • 0.8 teaspoon pepper black
  • tablespoons dijon mustard 
  • ounces elbow macaroni uncooked
  • 0.3 cup flat-leaf parsley fresh chopped
  • 0.5 cup green onions thinly sliced
  • 0.7 cup peas fresh green
  • 0.5 teaspoon kosher salt 
  • tablespoons juice of lemon 
  • 0.5 teaspoon lemon rind grated
  • 0.3 cup mayonnaise reduced-fat
  •  lower-sodium bacon crumbled cooked
  • 0.7 cup bell pepper diced red finely
  • 0.7 cup onion diced red finely
  • 0.3 cup shallots chopped
  • tablespoons cup heavy whipping cream fat-free sour
  • tablespoon citrus champagne vinegar

Directions

  1. To prepare dressing, combine first 9 ingredients in a food processor, and process until smooth. Cover and chill.
  2. To prepare salad, cook pasta according to package directions, omitting salt and fat; add peas during the last 3 minutes of cooking time.
  3. Drain; rinse with cold water.
  4. Drain.
  5. Combine pasta mixture, bell pepper, and next 4 ingredients (through rind) in a large bowl. Toss pasta mixture with half of dressing. Cover and chill until ready to serve. Toss salad with remaining dressing, and sprinkle with crumbled bacon; serve immediately.
