  • 1.5 teaspoons barbecue seasoning smoked (such as Hickory Liquid Smoke)
  • 0.3 teaspoon pepper black freshly ground
  • cups bread french cubed (1-inch) ( 8 [1-ounce] slices)
  • 0.5 teaspoon ginger fresh grated peeled
  • ounces mozzarella cheese fresh cubed
  •  garlic clove minced
  • tablespoon honey 
  • tablespoons rice vinegar 
  • 0.3 teaspoon salt 
  • 0.5 pound tomatoes coarsely chopped
  • teaspoon vegetable oil 
  • cups water 
  • 0.5 pound tomatoes yellow coarsely chopped

Directions

  1. Combine water and smoked seasoning in a zip-top bag, and add mozzarella. Seal and marinate in refrigerator 2 hours.
  2. Remove the cheese from bag, discarding the marinade.
  3. Combine vinegar and next 7 ingredients (vinegar through garlic) in a large zip-top bag, and add tomatoes. Seal and marinate in refrigerator 2 hours.
  4. Drain tomato mixture, reserving marinade.
  5. Preheat oven to 40
  6. Place bread cubes in a single layer on a jelly-roll pan.
  7. Bake at 400 for 10 minutes or until toasted.
  8. Combine cheese, tomatoes, reserved tomato marinade, and croutons in a large bowl.
  9. Serve immediately.
