Ingredients

  • cup baby spinach leaves packed
  • 0.3 teaspoon pepper black freshly ground
  • cup cucumber cubed unpeeled ()
  • 1.3 ounces feta cheese crumbled
  • 8-inch flour tortillas ()
  • pound leg of lamb boneless lean cut into 1/4-inch slices
  • 0.5 cup cup heavy whipping cream sour reduced-fat
  • 0.1 teaspoon mint flakes dried
  •  onion thinly sliced cut into quarters and
  • teaspoons red wine vinegar 
  • teaspoon greek seasoning 
  • large tomatoes thinly sliced

Directions

  1. Combine first 6 ingredients in a small bowl; stir well. Cover and chill.
  2. Coat a large nonstick skillet with cooking spray; add lamb and onion, and cook over medium-high heat, stirring occasionally, 6 to 7 minutes or until lamb is done.
  3. Remove from heat; stir in Greek seasoning.
  4. Divide lamb mixture evenly among 4 tortillas; top each evenly with cucumber sauce, tomato, and spinach.
  5. Roll up tortillas, and cut each wrap in half; secure with wooden picks, if necessary.
