  •  cucumber sliced quartered
  • ounces feta cheese crumbled
  •  bell pepper green minced
  •  juice of lemon juiced
  •  pita breads cut into wedges
  • pounds potatoes 
  • 0.5 cup onion red sliced
  • 0.5 cup salad dressing italian-style
  • 16 servings salt and pepper to taste

Directions

  1. Bring a large pot of salted water to a boil.
  2. Add potatoes and cook until tender but still firm, about 15 minutes.
  3. Drain, cool and chop.
  4. In a large bowl, combine the potatoes, green peppers, cucumbers, red onion and cheese.
  5. Whisk together the lemon juice, salad dressing, salt and pepper.
  6. Pour over salad and toss to coat.
  7. Serve with pita bread wedges if desired.
