  • 16 ounce chickpeas drained canned
  • ounces feta cheese crumbled
  • 8-inch flour tortillas ()
  • tablespoons mint leaves fresh thinly sliced
  •  garlic cloves 
  • 0.3 cup juice of lemon 
  • 0.3 cup olive oil 
  • 0.3 teaspoon paprika 
  • 0.5 teaspoon pepper 
  • teaspoon salt 
  • 0.3 cup tahini 
  • medium tomatoes

Directions

  1. Seed and dice tomatoes; sprinkle with 1 teaspoon salt.
  2. Let stand 1 hour in a wire-mesh strainer.
  3. Process chickpeas and next 5 ingredients in a food processor until smooth.
  4. Spread mixture evenly over tortillas.
  5. Sprinkle with tomato, feta, and next 3 ingredients; roll up. Chill 30 minutes.
  6. Cut each roll diagonally into 1-inch slices.
