Ingredients

  • 1.5 cups rome apple peeled chopped
  • ounce day-old bread white
  • tablespoons cornmeal 
  •  eggs lightly beaten
  • tablespoons flour all-purpose
  • teaspoons rosemary fresh chopped
  • teaspoon lemon rind grated
  • 1.5 cups milk 1% low-fat divided
  • teaspoons olive oil 
  • cup pears peeled chopped
  • 0.3 cup raisins 
  • 0.5 cup grapes red seedless halved
  • 0.3 cup sugar divided
  • 0.5 cup water boiling

Directions

  1. Combine raisins and boiling water; let stand 15 minutes.
  2. Drain and set aside.
  3. Trim crusts from bread.
  4. Cut each slice into 4 triangles; place in single layer in a 13-x 9-x 2-inch baking dish.
  5. Pour 1/2 cup milk over bread; let stand 5 minutes.
  6. Carefully (bread will be soggy) arrange bread triangles in the bottom of a 10-inch quiche dish coated with cooking spray. Top with apple and pear.
  7. Place flour in a medium bowl; gradually add remaining milk, stirring with a wire whisk until blended. Stir in 1/4 cup plus 1 tablespoon sugar, cornmeal, lemon rind, and eggs; stir well.
  8. Pour milk mixture over apple and pear; top with raisins and grapes, and sprinkle with rosemary.
  9. Drizzle oil over mixture; sprinkle with remaining sugar.
  10. Bake at 350 for 50 minutes or until set; cool on wire rack.
  11. Cut into wedges.
