Ingredients

  • tablespoons olive oil 
  • cups onion chopped
  • medium bell pepper red chopped
  • 13.5 oz pepper jack cheese smoked with pepper jack cheese links, sliced
  • 1.5 cups sweet potatoes and into mashed
  • 0.5 cup chicken broth 
  • 0.8 teaspoon salt 
  • 0.5 teaspoon pepper freshly ground
  • oz sharp cheddar cheese shredded
  • 6.5 oz just-add-water cornbread mix 
  • 0.3 cup buttermilk 
  • tablespoons butter melted
  •  eggs

Directions

  1. Heat oven to 400°F. In 12-inch cast-iron skillet, heat oil over medium-high heat. Cook onion and bell pepper in oil 4 minutes or until tender.
  2. Add sausage; cook 2 minutes. Stir in sweet potatoes, broth, salt and pepper.
  3. Remove from heat.
  4. Sprinkle with cheese.
  5. In medium bowl, stir cornbread mix, buttermilk, butter and egg just until moistened.
  6. Spread over cheese and sausage mixture to within 2 inches of edges.
  7. Bake 16 to 20 minutes or until top is golden brown.
