  • 0.8 teaspoon double-acting baking powder 
  • 0.3 cup canola oil 
  • large eggs 
  • 1.8 cups flour all-purpose
  • 0.5 teaspoon kosher salt 
  • tablespoon milk 2% reduced-fat
  • cup sugar divided
  • 0.3 cup butter unsalted softened
  • teaspoons vanilla extract

Directions

  1. Place first 3 ingredients (through oil) and 2/3 cup sugar in a large bowl; beat with a mixer at medium speed until well blended.
  2. Add milk, vanilla, and egg. Beat until blended.
  3. Weigh or lightly spoon flour into dry measuring cups; level with a knife.
  4. Combine flour, baking powder, and salt; gradually add to sugar mixture, beating until well blended. Cover and chill 30 minutes.
  5. Preheat oven to 35
  6. Place 1/3 cup sugar in a small bowl. Shape dough into 36 (1-inch) balls.
  7. Roll balls in sugar, and place 1 1/2 inches apart on large baking sheets coated with cooking spray. Flatten cookies slightly with bottom of a glass.
  8. Bake at 350 for 9 minutes or until set in center. Cool on pan 2 minutes.
  9. Remove from pan; cool completely on a wire rack.
